Food

So.... this is my request for people to leave comments giving me food ideas. I have a pretty standard kitchen with all the usual pots and pans. I've been cooking things like pasta and scrambled eggs. I need things that don't take a lot of ingredients, and things that don't go bad quickly. You know, easy college food. THANKS!!!

  1. Can you find pad thai/soba noodles? It's kinda like ramen only not dried. You could do ramen with vegies--saute the vegies, add the noodles, water and sauce mix. Add some nuts if you like (a little more protein). Tofu anyone?

  2. With lentils, you could make sloppy joes (just add barbecue sauce OR tomato sauce spiced up with vinegar, sugar, chili powder, garlic, and a little dry mustard.) With lentils, you could make a hot salad, just by dressing the cooked lentils with vinaigrette (onions/garlic are also nice to add). With lentils or cooked beans, you could make a burger with cheese, minced onion and breadcrumbs.

Couscous, cooked with onion and broth, and made with veggies and nuts or beans or lentils. Spaghetti, made with marinara sauce and lentils or garbanzo beans (if you can't find marinara sauce, just add oregano, onion, garlic and basil to tomato sauce).

Pizza made on a pita (5 minutes in a hot oven). Stir-fried veggies with tofu or beans over noodles or rice. Minestrone made with white beans, veggies and broth.

    That's it for right now.

    Love you lots,
    Mom

  3. Did you try mac n cheese yet? Like your mom I was going to suggest stuff on an english muffin, or whatever kind of bread you find that might be similar to a tortilla. Remember cheesy burritos? Experiment with different kinds of cheeses. And remember that they may have cheddar, but it may not be orange. In college I lived on canned chili in a tortilla. :) You could make some version of nachos--chips with cheese and beans of some kind, broiled or baked until melty. You see I'm on a cheese theme. I make soup all the time--can of broth, can of tomatoes with juice, whatever veg I happen to have around. Add noodles or beans if you have them too. You could make it with two cans of broth and no tomato.

How's school going? No new updates?

    Love you,
    Aunt D
